Today we had a full day even though every minute was spent at home. I did some cooking and cleaning, baking and cooking, but the big question is did the haircuts ever get done?
Bakery Sugar Cookies

1 stick butter
1/2 c. shortening
1/2 c. brown sugar
1 1/2 c. white sugar
1 T. corn syrup
1 T. vanilla extract
1 egg
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
3 1/2 c. all-purpose flour
Preheat oven to 375 (25 degrees lower for dark pans). Cream fats and sugars. Add liquids and dry ingredients other than flour. Mix thoroughly!! Then add in flour scraping bowl. Mix completely. Dough will be dry. Grab a piece of dough and squeeze together gently, press tops into sprinkles or sugar and place on cookie sheet. Bake for 8-11 minutes until cookie is puffed, but still very soft. Cool on cookie sheet for 2 minutes and then move them to a wire rack to cool. If underbaked these will remain soft and chewy.

4 carrots
2 onions
3 celery ribs
1 clove garlic
Saute in 2 T. butter
Add 3 T. flour and 28 oz. water with 2 T. Knorr chicken seasoning (or chicken broth). Cook 1-2 minutes. Add in cubed raw chicken (about 1.5-2 pounds), 1/2 tsp. poultry seasoning, 1/4 tsp. garlic powder
1/8 tsp. pepper and bring to a boil. Simmer 5 minutes. Make dumpling mixture using Bisquick or other homemade version and drop by spoonfuls onto simmering liquid. Cook uncovered 10 minutes, then cover and cook 10 more minutes. Optional is to add in 1/4 cup half/half. I didn't do this and we thought it was still very good. Next time I'll make different dumplings because my family likes a chewier dumpling instead of the fluffy style of this recipe. This had exceptional flavor and I think it's from the addition of the poultry seasoning.
