How to Backup Your Sourdough Starter So You Never Lose It

I got a bit of a shock when I smashed my sourdough starter jar all over the kitchen floor. I set out to find out how the have a backup, and have always kept one since.
Step 1: ensure you start is at room temperature.
Step 2: feed your starter using your normal feeding process, ensuring there is enough starter leftover after creating a backup.
Step 3: lay out baking paper and spread your starter out as thinly as possible. Leave for
1-2 days.
Step 4: break up your starter, blend into a jar and place in a dated airtight container.
This makes a good gift!
Step 5: feed your starter using a 1:1:1 ratio initially, and then repeat the flour and water feeding right after. You may need to feed again the next day or as required to get the increase / double in starter size to be ready for baking.
Don’t risk ruin! Have a backup.
