This Is The Best Sourdough Combination I’ve Made So Far

I’ve tried a few different sourdough inclusions and I just can’t see past this one! Since I first made it, it has been a weekly staple in my house and never sees the freezer.
300g water
10g salt
100g starter (1:1)
450g bread flour
75g cheddar cheese
60g jalapeño
Mix lukewarm water, salt and starter until shaggy.
Stretch and fold.
Rest 30m then stretch and fold.
Rest 30m then add half inclusions. Stretch and fold.
Repeat above.
Ball up and leave to increase in size by around 50%. For me this is 7-8hrs.
Pull into a ball and rest 30min.
Pull into a ball and into floured banneton then in fridge for 12-16hrs.
Preheat Dutch oven 30min 232deg c.
Bake 20 mins lid on.
15 mins lid off.
Remove into rack.
Cut after 2 hours and demolish before dinner.
