16 oz Spinach, fresh or frozen, chopped
3 tbsp Butter, unsalted
¼ cup Onion or shallot, chopped
4 cloves Garlic, minced
1 cup Heavy Cream
4 oz Cream Cheese
1 cup Parmesan Cheese, shredded
Salt, to taste
Black Pepper Powder, to taste
1 small pinch Ground Nutmeg

Recipe Notes:
Blanch the Spinach First (Optional): Even though I prefer sautéing the spinach with aromatics for the best flavor, you can also blanch it briefly in boiling water before sautéing. Just make sure to transfer the spinach to an ice bath immediately to stop the cooking process. This helps preserve the vibrant green color of the spinach.
Avoid Overcooking Spinach: Sauté the spinach just until it wilts as I suggested in the recipe. Overcooking can cause the spinach to become mushy and lose its bright green color. This not only affects the texture but can also dull the flavor. So I recommend to keep an eye while sauteing it.
Customize Seasoning to Taste: Along with ground nutmeg, you can also experiment with other spices like cayenne pepper or paprika for a slight heat. If you prefer, fresh herbs like thyme or parsley can also be added for a burst of freshness and flavor.
If Using Frozen Spinach Leaves: If you prefer using frozen spinach, make sure to thaw it first and drain any excess water before adding it to the recipe. Start by sautéing your aromatics (onion and garlic) in butter until they're soft and fragrant. Then, add the cream cheese and heavy cream, stirring to combine. Allow the cream cheese to melt completely, and then add the thawed spinach and mix well. Finally stir in the Parmesan cheese before removing the mixture from heat. Unlike fresh spinach, which needs to be sautéed, frozen spinach is already cooked, so it only needs to be heated through and incorporated into the sauce. This step simplifies the process, and avoid the need for extra sautéing.
