Ingredients for Coffee Cake:

Water: 120 g
Coffee: 12 g
Flour: 250 g
Baking powder: 8 g
Eggs: 3
Sugar: 200 g
Vanilla sugar: 5 g
Milk: 120 g
Vegetable oil: 100 g

How to Make Turkish Coffee

Ingredients:

Turkish coffee: 1–2 teaspoons
Cold water: 1 coffee cup
Sugar: optional (½, 1, or 2 teaspoons)

Instructions:

1. Pour cold water into the cezve (Turkish coffee pot).
The water must be completely cold to help the coffee foam better.
2. Add the Turkish coffee.
Typical amount: 1 heaping teaspoon per cup.
3. Add sugar if desired:
Without sugar: plain
Slightly sweet: ½ teaspoon
Regular sweet: 1 teaspoon
Very sweet: 2 teaspoons
4. Before turning on the heat, stir well so the coffee and sugar dissolve completely in the water.
5. Place the cezve over very low heat.
Turkish coffee should heat slowly so it can foam and release its aroma.
6. When the foam rises, **before it boils**, remove the cezve from the heat.
Spoon some of the foam into the cups.
7. Put the cezve back on the heat to create a second layer of foam.
Then pour the coffee into the cups.

Important Tip:

Turkish coffee should **not boil**. It should rise to the point just before boiling and foam.
After pouring into the cups, wait *30–60 seconds* for the grounds to settle before drinking.

Important notes:
Please remove the eggs, milk, and butter from the refrigerator 30 to 45 minutes before starting so they come to room temperature.
Always preheat the oven 15 minutes before placing the cake batter inside, so the temperature reaches the correct level.
After baking, test the cake in several spots with a toothpick to ensure it is fully cooked.
Allow the cake to cool completely before removing it from the pan, because a warm cake is delicate and may crumble.
Make sure to learn the “personality” of your oven through a few tries and adjustments so baking becomes easier for you.
