Hello my Friends, welcome to my Southern Kitchen!
Today I am doing another recipe using Blueberries for National Blueberry Month, I love Pancakes one of my favorite Breakfast and Brunch dishes! So I am making some Fresh Blueberry Pancakes from scratch! Light, fluffy, and full of juicy blueberries; everyone will love and enjoy this and it is a great way to kick off your day! Great to serve any morning and at any Brunch occasion!
1 1/4 cups all-purpose or self-rising flour
1 tablespoon baking powder (if using all-purpose flour)
1/2 teaspoon salt (if using all-purpose flour)
1 1/2 teaspoons white sugar
1 extra-large egg, room temperature
1 teaspoon pure vanilla extract
1 teaspoons lemon zest
1 cup buttermilk, room temperature
1 tablespoon unsalted butter, melted and cooled, plus more for serving
1/2 cup fresh blueberries, rinsed and removed any busted ones
Maple syrup or blueberry syrup, for serving
Blueberries, for garnish (optional)
Make 3 to 4 Pancakes
Ellen’s Magic: You may double this recipe, makes 6 to 8 pancakes.

In a large bowl, add in the flour, (baking powder and salt, if using), and sugar; sift or whisk together until well blended and set aside. In a medium bowl, add in the egg, lemon zest, vanilla extract, melted butter, and buttermilk; whisk together until well combined. Next add in the wet ingredients into the wet ingredients and whisk together until well incorporated. Add and fold in the blueberries (be careful not to over mix). Set the batter aside. Preheat a large pan or griddle over medium heat and spray with cooking spray, or melt a dot of butter. Add about a fourth of a cup of batter to the pan using a measuring cup and cook until golden on both sides. The underside will take about 2 to 4 minutes to cook, once golden and you see little holes on top, flip and cook for an additional minute or until golden. Repeat the process for the remaining batter and serve warm with maple or blueberry syrup, butter, and fresh blueberries (if desired) and enjoy!
