One large eggplant
3/4 quarters pound hamburger
3/4 pound sausage
olive oil 
1 tablespoon chopped garlic
1/2 cup red wine
2 teaspoon Italian season
Two bay leaf
1 1/2 cups
Four eggs whisk
2 cups of bread, breadcrumbs
8 ounces of shredded mozzarella cheese
Put the olive oil in a sauce, pan and brown add the sausage brown and remove then add the hamburger brown and remove. Add the tablespoon of chopped garlic sauté 1 to 2 minutes do not brown it. Add the half cup of red wine and scrape to glaze the pan and save the meat drippings add the tomato sauce, Italian seasoning, and bay leaves. Simmer on low one hour stirring every 15 minutes. Slice up the eggplant and quarter inch slices you can cut in half if they’re big dip the sliced up eggplant first flour then egg then breadcrumbs preheat the oven to 350 on a cookie sheet. Put the eggplant slices and cook for about 40 minutes until golden brown removed from pan and let cool in a casserole dish. Make layers of tomato sauce on bottom then egg eggplant more sauce, then mozzarella cheese and repeat for about three layers cover with foil preheat oven to 350. Bake for about 45 minutes. Take foil off the last five minutes. Removed from oven and let rest for 10 minutes.! Enjoy
