[PLEASE READ BELOW FOR THE ACTUAL RECIPE. I made one mistake in the video]
Join me in baking one of my favourites pastries ever: Cinnamon rolls!
I tried to experiment by adding some apples. Taste wise, the rolls were great! However, there aspects that definitely need improvement.
The rolls were not perfect but I was still so happy with the outcome. I have actually been baking more after filming this and they have improved greatly. Will probably film another video when I have perfected them, so stay tuned!
Ingredients:
For the dough
3 cups of bread flour (plain flour can be used too)
1 cup milk (LUKEWARM NOT HOT)
2 tbsp butter
1 egg
1 1/2 TEASPOON active dry yeast (I said tbsp in the video by mistake sorry! Please use teaspoon, also you can use instant dry yeast too)
1/4 cup sugar
1/4 tsp of salt
For the filling
Apples (optional)
4 tbsp butter (I used 5 tbsp but that was too much!)
1 and a half tbsp of cinnamon
Procedure:
1. Heat up the milk. You need it LUKEWARM. I take half of the milk, let it cool down a bit and use it for proofing the yeast.
2. In the mixing bowl, I will place my yeast and a bit of sugar to help with the activation. Half of the milk, once it’s in the right temperature, will be used to proof the yeast. It will take about 5 minutes.
3. While the remaining milk is still hot, I’m gonna use it to melt the butter. You can also melt your butter separately using whatever method you want (e.g. microwave it).
4. For the dry ingredients, I sift the flour and then mix in the sugar and salt in a different bowl.
5. Beat the egg.
6. The yeast should be ready by now. It will look foamy on the top.
7. Mix all the ingredients together.
8. If using a stand mixer it may take up to 10 minutes depending on the speed and type of mixer.
9. I like to knead the dough by hand for a bit too. It’s done if it’s looking smooth and elastic and it should bounce back when poked.
10. Leave it to rise for a couple of hours or until it doubles in size. Rising time will depend on the temperature and the yeast used.
11. After the first rise, you can now fill the dough and shape. I made two batches with 8 rolls each so 16 in total! Just play around and experiment with different fillings.
12. Leave it to proof again for about 30 minutes. Preheat the oven in the meantime.
13. Then bake! Mine took 12 minutes in 170 C but it will vary depending on your oven. Some recipes suggest baking at 180 C for 20 minutes? I think our oven is just really weird so I can’t really give you a precise time or temperature for this.
14. If unsure just keep checking after 8 minutes or so then they should be ready to eat!
