🔥 Learn how to make the perfect Advanced Aerocano on the Breville/Sage Barista Express! ☕ About the Recipe:
The Aerocano is an iced, lightly steamed espresso drink that creates a silky and refreshing texture. In this Level 2 version, we emphasize an improved workflow using the Barista Express, while maintaining temperature control and maximizing foam creation. We extract the espresso separately, then steam it together with ice and cold water, creating a unique fusion of temperature and texture. For this recipe, we used an 80 ml Loveramics Urban Twisted Glass for espresso extraction, and a 360 ml glass for serving.
☕ Ingredients:
Coffee beans: 18–20 grams (freshly roasted, pre-dosed in single-dose tubes)
Ice: 100 grams
Cold water: 120 ml

Breville/Sage Barista Express
Single-dose tubes (for convenience and precision)
RDT spray bottle (to reduce static)
WDT tool (for even distribution)
Bottomless portafilter
Funnel (to reduce mess when grinding)
Normcore tamping station and auto-level tamper
Puck screen (for more even water flow)
Thermometer (set to ~60°C)
Pitcher (to combine and steam the drink)
80 ml espresso glass (Loveramics Urban Twisted)
360 ml serving glass
Scale (to monitor output weight and ratios)

1️⃣ Prepare the Espresso
• Mist the beans inside the single-dose tube using RDT.
• Start the grinder (hot-start) and pour the beans into the hopper.
• Grind directly into the bottomless portafilter using the funnel.
• Distribute the grounds using WDT for evenness.
• Tamp firmly with the Normcore auto-level tamper and add a puck screen on top.
• Extract the espresso into the 80 ml Loveramics Urban Twisted Glass.
2️⃣ Prep the Pitcher
• Add 100 g of ice and 120 ml of cold water to the pitcher.
• Pour the freshly extracted espresso into the same pitcher.
3️⃣ Steam the Mixture
• Steam the full mix (espresso, ice, water) using the steam wand until it reaches ~40°C.
• This technique allows for longer steaming time and a delicate, frothy texture.
4️⃣ Serve
• Transfer the drink into the 360 ml serving glass.
• The Aerocano should be silky, lightly foamy, and cold, offering a unique texture and refreshing profile.
