Arabic Koussa Mahshi (Stuffed Zucchini cooked in a tomato sauce)♥️.
✨Ingredients:🥄
33 Lebanese Zucchini,cored
-Stuffing:
330g lamb mince
1 1/2 cup medium grain rice,rinsed & drained
3/4 cup pine nuts toasted in 1 tbs ghee
1 tsp Lebanese 7 spices
Salt to season
-For the tomato sauce:🍅
1 tbs ghee
5 garlic cloves,crushed
4 tomatoes,peeled & blended
5-6 tbs tomato paste
10 cups hot water
Salt to season
1 tbs dried mint.
Method👩🏻🍳🫶🏻:
1:Core(remove the zucchini flesh),wash them and set aside to dry.
2:In a bowl add the rice,minced meat,7spices,salt and toasted pine nuts.Let the ghee to cool down a little bite.Use your hands & mix the stuffing ingredients really well.
3:Start stuffing each cored zucchini with the rice mixture,until you reach 3/4 to its opening leave approximately 1/5cm (Be careful not to overstuff them because the rice will be expand as it’s cooked).
4:To make the tomato sauce,heat the ghee in a large deep pot over medium heat.Add the garlic and sauté until becomes fragrant,then add blended tomatoes,tomato paste stir all the ingredients.Pour in 10 cups of boiling water,stir for a few seconds till the tomato paste dissolved and season with salt.Cover,bring to a boil on high heat about 5-6 minutes.
6:Slowly,add in the kousa into the tomato sauce.Cover half way,and leave them to simmer on medium heat for about 40 minutes.For the last 5 min add the dried mint.Finally test out a kousa by using a fork to see if it is tender and the rice cooked through.
Remove from heat and serve hot.W Sahten w Hana ♥️🫶🏻.
