Horsegram Chutney (Kollu Chutney) Recipe
Ingredients:
Horsegram (kollu) – 1/2 cup
Dried red chilies – 2 to 3 (adjust to spice level)
Garlic – 2 cloves
Tamarind – a small piece (or ½ tsp paste)
Grated coconut – 1 cup (optional, for richness)
coriander seeds - 1 tbsp
cumin seeds - 1/2 tsp
Mustard seeds - 1/4 tsp
Salt – to taste
Tempering (optional):
Mustard seeds – ½ tsp
crushed garlic - 4 cloves
red chili - 2
Curry leaves – a few
Oil – 1 tbsp
How to Make It:
Dry roast the horsegram in a pan until it turns aromatic and slightly darker. Let it cool.
In the same pan, sauté the red chilies, coriander, Mustard, cumin and garlic for a minute.
Add tamarind, ginger, salt and coconut to a blender along with the roasted ingredients.
Grind everything with a little water to a coarse or smooth chutney based on your preference.
Prepare tempering by heating oil, adding mustard seeds, garlic, chili curry leaves. Pour over the chutney.
Serving Suggestions:
Tastes amazing with hot rice and ghee, idli, dosa, or even roti.
It's also a great accompaniment for millet dishes or ragi mudde.
