Fresh Breakfast Acai Bowl Recipe

Ingredients

-1 (100g) frozen acai packet (unsweetened), broken into pieces
-1 banana (use a frozen one if you prefer a colder/icy texture)
-¼ cup yogurt, plant-based milk of your choice, or 100% apple juice
-Few ice cubes (optional for colder/icy consistency)
-Toppings of your choice (fresh fruit, granola, honey, bee pollen, goji berries, nuts, seeds, etc.)

Directions

Combine acai, banana, and yogurt/milk in a high powered blender. Make sure to Add a few ice cubes if you desire a denser consistency. Blend on high until all ingredients are smooth (about 30 seconds). Use a tamper to push ingredients around if they get stuck.
Pour acai mixture into the bottom of a bowl
-Add toppings of your choice and drizzle with honey if you would like!


Vegan BLTA sandwich

Ingredients

whole grain bread of your choice
tempeh strips (I used maple flavored tempeh)
vegan mayo (grapseseed oil Vegenaise is my #1 favorite)
sliced tomato
sliced avocado
lettuce

Directions
Add a tiny bit of olive oil to a skillet or pan to very lightly coat the bottom (approx. 1/2 teaspoon)
Add tempeh strips to pan and cook over medium/low heat until golden brown, flipping once
Lightly toast your bread.
Spread the inside of one piece of your toast with vegan mayo.
Make a sandwich by adding the tempeh, avocado, tomato slices, and lettuce.


Homemade vegan pasta (I eyeball ingredients and don't use measurements but here is a great recipe to start with if it's your first time making pasta)

*Some people prefer to use warm/hot water when making pasta. This changes the protein structure of the dough. Either is acceptable and both will create a nice dough. I prefer to use ice cold water because I think it gives the pasta a perfect al dente texture.
