EASY UN-FRIED RICE
INGREDIENTS
4c cooked white rice
2c frozen mixed veggies, thawed
1/4c low sodium soy sauce
1/2 chopped onion
1tsp minced garlic
1/2 tsp grated fresh ginger
1 tsp toasted sesame oil*
*If you are oil-free then use a handful of sesame seeds to garnish instead
OPTIONAL AD-INS
“Pork” 1 block drained, pressed, cubed tofu marinated and air fried
Diced fresh or canned pineapple
Scrambled Just Egg or tofu scramble
mung bean sprouts
scallions
baby corn
water chestnuts
“Pork” MARINADE
1/2c low sodium soy sauce
1/4c balsamic vinegar
2 Tbsp maple syrup
1/2 tsp garlic powder’1/2 tsp smoked paprika
1/2 tsp liquid smoke
DIRECTIONS
Saute garlic and onions for 5 minutes in a splash of soy sauce, water or veggie broth. Use medium-high heat. DO NOT BURN THE GARLIC. Keep an eye on it.
Lower the heat to medium.
Add in the rice and separate the grains if they are sticky. Toss with the garlic and onions. Add in the soy sauce and keep it moving in the pan.
Add in the mixed veggies and heat through.
Add in the ginger.
If needed add more soy sauce and ginger after tasting.
Add in your tofu or pineapple.
Drizzle with toasted sesame oil or sesame seeds.
DIRECTIONS FOR THE “PORK”
Marinate the drained, pressed and cubed tofu for at least one hour.
Air fry or bake until brown and slightly crisp on the outside. It should still be somewhat chewy and soft inside.
400 degree air fryer for about 12 minutes to start. Add time as needed depending on the size of your cubes.
400 degree oven 20-30 minutes. Check after 20 minutes. Use parchment or non stick oven tray.
