These are not pancakes.
And they are definitely not crêpes.
These are traditional Russian yeasted bliny — thick, airy and slightly sour — the kind we make during Maslenitsa, one of the oldest Slavic holidays.
In this video, I’m not just sharing a recipe.
I’m sharing a small ritual: how we slow down, let things rise properly, and cook something that has been made for centuries.
And yes… I’ll also explain why Russians sometimes shout “blin!” when something goes wrong.

• 400 g flour
• 700 ml milk (I know I said 600, but it's 700 😂)
• 4 eggs
• 25 g fresh yeast or 12 g dry yeast
• 60 g butter
• 1½ tbsp sugar
• Salt
