Malted milk ice cream

INGREDIENTS
1.5 cups of milk
¾ cup castor sugar
Pinch of salt
1.5 cups of cream
¼ teaspoon vanilla extract
1 cup malt powder
4 egg yolks
DIRECTIONS:
1) Whisk on low heat milk, cream, malt powder, vanilla and salt then take off the heat
2) Whisk eggs with sugar until pale
3) temper eggs by slowly adding in milk mixture
4) Return mixture to stove and heat until thickened. Can take 10-20 mins. Make sure eggs don’t scramble. Test mix by drawing a line over the back of a wooden spoon
5) Cool mix in fridge for 2 hours or overnight
6) Churn in your icecream maker according to instructions. Return to the freezer for 1-2 hours if you want it more set
Serve garnished with a few Maltesers. It also is delicious with mint chips mixed through (e.g a chopped up peppermint crisp chocolate bar)
Note: This turned out quite sweet, I might next time reduce the sugar to 2/3 cup and malt to 3/4 of a cup.
