These Double Chocolate Chip Cookies Recipe is definitely a chocolate lover’s dream! Soft, fudgy and with the perfect amount of chew 😋 I made it using cocoa powder from @thecocoacircle_ which is super rich and dark and gives the cookies this amazing flavor!
Ingredients
• ½ cup (113 g) unsalted butter, partially melted
• ¾ cup (150 g) soft brown sugar
• 2 tbsp (25 g) fine white sugar
• 1 whole egg + 1 egg yolk
• 1½ tsp vanilla extract
• 1 cup + 4 tbsp (155 g) all-purpose flour
• ⅓ cup (32 g) cocoa powder
• ½ tsp instant coffee powder
• ½ tsp baking soda
• Pinch of baking powder
• ½ tsp cornstarch
• ½ tsp salt
• 130–150 g chopped milk & dark chocolate

Method
• Melt the butter in the microwave until partially melted, not fully liquid.
• In a bowl, mix the partially melted butter with brown sugar and white sugar until smooth and slightly glossy.
• Add whole egg, egg yolk, and vanilla extract. Beat until fully combined.
• In a separate bowl, sift together flour, cocoa powder, baking soda, baking powder, cornstarch, salt, and instant coffee.
• Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
• Fold in chopped chocolate evenly.
• Cover the dough and chill for 30 minutes in the refrigerator.
• Preheat the oven to 175°C / 350°F and line a baking tray with parchment paper.
• Scoop cookie dough onto the tray, leaving about 2 inches between each cookie.
• Bake for 10–12 minutes, until edges are set and centers still look soft.
• Let cookies cool on the tray for 5 minutes before transferring to a wire rack.
