Young green jackfruit is a superb conductor of flavour as the shreds soak up loads of dressing. Canned unripe jackfruit in brine is readily available at Asian grocers, and increasingly at well stocked grocery stores. Make sure you buy the jackfruit in brine and NOT the jackfruit is syrup which is used for desserts.
Serve this light and refreshing salad as a pre dinner snack or as a light lunch. Spoon it atop rice crackers for an added textural crunch.
