This Vietnamese eggplant recipe is appreciated by vegans and vegetarians. It's easy to make, has great depth of flavour, and the eggplant's luxurious buttery texture is divine. The ginger and chile add a bright spark.
INGREDIENTS
1 pound (454 g) eggplant (aubergine)
3 tablespoons soy sauce
1 tablespoon plus 1 1/2 teaspoons vegetarian mushroom stir-fry sauce
1/4 cup water or vegetable stock
2 teaspoons sugar
1 1/2 teaspoons cornstarch (optional)
1/4 cup plus 2 tablespoons (or more) vegetable oil
1 tablespoon finely chopped ginger
1/2 fresh medium-hot red chile, finely chopped
1/4 teaspoon freshly ground black pepper
1 scallion, thinly sliced
1 tablespoon roughly chopped cilantro
2 tablespoons cashews, toasted (optional)
