Paalak Methi Bajra Vadi is a very tasty and nutritious Gujrati snack, mostly made during the winter season. Made with bajra flour and leafy vegetables like spinach leaves (paalak), fenugreek leaves (methi)and very few spices,the mixture is first steamed,cut into pieces,then either shallow fried,deep fried or airfried.
Crispy golden brown on the outside while soft inside,these healthy Paalak Methi Bajra Vadis can be enjoyed on a wintry evening with a hot cup of tea or with any chutney or raita!
Ingredients for Paalak Methi Bajra Vadi
Chopped paalak leaves-1 bowl
Chopped methi leaves-1 cup
Chopped dhaniya leaves-a handful
Ginger-1/2 inch
Green chillies-6
Salt to taste
Sugar-1 tsp
Lemon juice-1 tbsp
Bajra flour-1 cup
Besan-1/4 cup
Rice flour-1/4 cup
White til seeds-1 tbsp
Haldi powder-1/2 tsp
Hing powder-1/2 tsp
Baking soda-1 tsp
Groundnut oil-1 tbsp
Oil for shallow frying
Ingredients for Pudina Raita
Pudina leaves-20
Green chilli-1
Curd-1 cup+1 tbsp
Salt-1/2 tsp
Black salt-1/2 tsp
Roasted jeera powder-1 tsp
For garnishing
Mint sprig
Method of preparing Paalak Methi Bajra Vadi
In a bowl,add chopped paalak leaves,methi leaves,coriander leaves,salt, sugar, lemon juice and mix well,crushing the leaves so that they release their juices.
Add bajra flour,besan,rice flour,ginger green chilli paste,white til seeds,haldi powder,hing, baking soda, groundnut oil and mix all ingredients into a soft dough.No need to add any extra water.
Grease a steamer plate with oil and line with baking paper.Sprinkle white til seeds on paper.
Spread dough on steamer plate,level with spatula and sprinkle some til seeds on it.
Steam for 15 min,cool to room temperature and cut into pieces.
Shallow fry vadis in medium hot oil till golden brown and crispy on both sides.
Pudina Raita
In a mixer jar,grind pudina leaves,green chilli and a tbsp of curd into a smooth paste.
In a bowl,add curd and whisk it well.Add pudina paste,salt, black salt,roasted jeera powder and mix well.
Transfer Pudina Raita to a serving bowl and garnish with a mint sprig.
Serve hot, crispy Paalak Methi Bajra Vadi with chilled Pudina Raita and enjoy!
