Bajra is a power packed grain and a super food being rich in omega 3 fats, magnesium, potassium,fibre,iron,protein and a host of other valuable nutrients and minerals.Its consumption helps to lower blood pressure and cholesterol levels,controls blood sugar level and also helpful in weight loss.It helps to keep the body warm from inside during winter and is extremely nutritious.
Bajra Veg Khichdi is a one pot nutritious meal especially during winter months.It has the goodness of lentils and fresh winter veggies.Add a spoonful of ghee on top and enjoy with Spiced Buttermilk and papad.
Bajra Veg Khichdi
Ingredients
Bajra(soaked overnight)-1 cup
Split moong dal(soaked for 1 hr)-1/4 cup
Ghee-2 tbsp
Jeera-1 tsp
Bay leaf-1
Cinnamon stick-1
Cloves-3
Ginger Garlic paste-1 tbsp
Onion(chopped)-1/4 cup
Potato (chopped)-1/4 cup
Tomato (chopped)-1/4 cup
Carrot (chopped)-1/4 cup
Green capsicum (chopped)-1/4 cup
Fresh green peas-1/4 cup
Turmeric powder-1/2 tsp
Salt to taste
Hing(asafoetida powder)-1/2 tsp
Garam masala powder-1/2 tsp
Red chilli powder-1 tsp
Dhaniya powder-1 tsp
Jeera powder-1 tsp
Fresh coriander leaves-1/2 cup
Green chillies (chopped)- 3 or 4
Curry leaves-6 or 7
Water as required
Pre soak bajra or pearl millet in water for at least 8 hours or overnight.Next morning drain out the water.
Heat a pressure cooker and add ghee.Add jeera seeds, cinnamon stick,cloves,hing,bay leaf and stir for a min.Add green chillies,ginger garlic paste and stir till raw smell goes.Add chopped onions and saute till it softens.Add chopped carrots ,tomato, capsicum, potato ,green peas and stir.Add turmeric powder,salt,red chilli powder, coriander powder,cumin powder,garam masala powder and mix well.
Add 4 cups of water and when it comes to a boil,close the cooker and pressure cook for 4-5 whistles.
Garnish Bajra Veg Khichdi with fresh coriander leaves.
Masala Chaas (Spiced Buttermilk)
Ingredients
Ginger (chopped)-1/2 inch
Green chilli-1
Curry leaves-8 or 10
Fresh coriander leaves-a fistful
Curd-1 cup
Roasted jeera powder-1/2 tsp
Black salt-1/2 tsp
Salt to taste
Water-2 cups
In a mixer jar add all the ingredients and grind into a smooth liquid.
Garnish Masala Chaas with roasted jeera powder and fresh coriander sprig.
Serve hot and tasty Bajra Veg Khichdi with Masala Chaas and fried or roasted papad and enjoy this winter special recipe with family and friends.
