步骤
① 苹果馅制作:苹果去皮去核切丁,加适量柠檬汁搅拌均匀备用。锅中中小火放入黄油融化,倒入苹果丁,炒软后加入红糖、枫糖浆、盐翻炒均匀。倒入淀粉水(淀粉加水调匀),翻炒均匀收干水份,加入肉桂粉翻炒均匀,放凉备用。
② 派皮制作:低筋面粉加糖粉搅拌均匀,加入切块的黄油,手搓至沙粒状。加入全蛋液,揉成面团,裹保鲜膜冰箱冷藏30分钟。
③ 组合:取2/3面团擀平擀薄(约3mm厚),放入模具,按压贴合,底部用叉子戳孔。加入苹果馅铺满。剩余面团擀薄切成长条(约1cm宽),编织覆盖在馅料上。刷2次蛋液。
④ 烘烤:风炉预热180度,烘烤15分钟后转150度烘烤20分钟。

Making Process
① Apple filling preparation: Peel, core, and dice apples, mix with appropriate amount of lemon juice and set aside. Melt butter in a pan over medium-low heat, add apple dices, stir-fry until soft, then add brown sugar, maple syrup, and salt, stir evenly. Pour in starch water (starch mixed with water), stir until water is absorbed, add cinnamon powder, stir evenly, and let cool.
② Pie crust preparation: Mix low-gluten flour and powdered sugar evenly, add diced butter, rub with hands until sandy. Add whole egg liquid, knead into dough, wrap in plastic wrap and refrigerate for 30 minutes.
③ Assembly: Take 2/3 of the dough, roll it flat and thin (about 3mm thick), place in the mold, press to fit, poke holes in the bottom with a fork. Add apple filling to cover. Roll the remaining dough thin and cut into strips (about 1cm wide), weave to cover the filling. Brush with egg liquid twice.
④ Baking: Preheat air oven to 180°C, bake for 15 minutes then turn to 150°C and bake for 20 minutes.
Key Operation Tips
Use medium-low heat when stir-frying apple filling to avoid burning.
Rub the pie crust dough until sandy, do not over-knead.
Ensure refrigeration time is 30 minutes.
