Recipe:

Ingredients (serves 4):

300g (10 oz) fresh mussels

200g (7 oz) cooked cannellini or borlotti beans

200g (7 oz) mixed pasta (or ditalini)

2 garlic cloves

Extra virgin olive oil

6–7 cherry tomatoes (optional)

Chili pepper

Salt & black pepper

Fresh parsley

Filtered mussel water

Instructions:

1. Clean the mussels and steam them in a covered pan with a garlic clove until they open. Remove from heat, shell most of them (keep some in-shell for garnish), and chop about half. Filter and save the cooking liquid.


2. In a large pan, sauté garlic, chili pepper, and cherry tomatoes (if using) in olive oil.


3. Add the cooked beans and some of the filtered mussel water. Simmer gently.


4. Add the pasta and cook risotto-style: stir often and add liquid gradually until al dente.


5. When the pasta is almost cooked, stir in the chopped mussels. Let them blend into the sauce and release all their flavor.


6. At the end, add the remaining shelled mussels and garnish with a few in-shell for #glutenfreeoption #italianfood #quickrecipes presentation.


7. Finish with a drizzle of olive oil, freshly ground black pepper, and chopped parsley. Let it rest 1 minute, then serve hot and creamy.
