Paneer Ghee Roast Recipe:

Cavin’s Paneer - 400 grams

To Dry Roast:

Coriander Seeds - 1 tbsp
Cumin Seeds - 1 tbsp
Fennel Seeds - 2 tsp
Black peppercorns - 2 tsp
Fenugreek Seeds - ½ tsp
Dried Red Chilli - 3 nos
Kashmiri Red Chilli - 6 nos

Other Ingredients:

Ginger - 1 inch
Garlic - 6 cloves
Tamarind - ½ lemon sized ball
Warm Water - ¼ Cup
Water - ½ Cup
Ghee - ¼ Cup + 2 tbsp
Onion (finely chopped) - 1 no
Curd - ¼ Cup
Curry leaves - 10 nos
Salt - ¾ tsp
Jaggery - 1 tsp


Cooking Instructions:

1. Soak tamarind in ¼ Cup of warm water and extract the tamarind juice.

2. Heat a pan, add all the ingredients under dry roast and dry roast them until the spices are aromatic. Set aside.

3. Transfer the dry roasted spices to a mixer grinder, add the ginger, garlic, tamarind juice and ½ Cup of Water. Grind into a smooth paste.

4. Heat Ghee in a pan, add the paneer cubes into the pan and shallow fry them until lightly golden brown on all sides.

5. To the same pan, add the finely chopped onions and saute until translucent.

6. Add the ground spice paste to the pan. Saute for a minute.

7. Add the whisked curd to the pan. Add salt.

8. Continue to cook the masala for 5 mins by continuously stirring and adding 2 tbsp of ghee in between.

9. Once the ghee separates from the masala, add jaggery. Cook for 3 minutes.

10. Add the shallow fried Paneer cubes, curry leaves.

11. Coat the Paneer with the masala and Cook for 3 minutes.

12. Serve hot with Paratha or Chapati.
