Khajoor Pak is a traditional and nutritious Indian sweet made mainly from dates (khajoor), dry fruits, and desi ghee. It is especially popular in winter as it provides warmth, strength, and instant energy.
To prepare Khajoor Pak, seedless dates are finely chopped or crushed into a paste. In a heavy pan, desi ghee is heated and chopped dates are cooked on low flame until they turn soft and glossy. Then chopped dry fruits like almonds, cashews, pistachios, and raisins are added. Edible gum (gond), lightly fried in ghee and crushed, is mixed in for extra nutrition.
Spices like cardamom powder, nutmeg powder, and dry ginger powder are added to enhance the flavor. The mixture is cooked until it leaves the sides of the pan and comes together like a thick dough. It is then spread on a greased plate and allowed to cool slightly before cutting into pieces.
