Valentine’s Day is just around the corner. How about treating your sweetheart to a home-cooked meal. In this video, we will make Chicken Florentine with a size of Orzo followed by a quick and elegant dessert. It’s the perfect dinner for two.
Chicken Florentine
3 boneless/skinless chicken thighs or breasts
3 cups of fresh spinach
2 garlic cloves
1tbsp lemon zest
2/3 cup white wine
1/3 cup chicken stock
1 cup whipping cream
4 tbsp unsalted butter
2 tbsp olive oil
½ cup flour
½ cup grated parmesan
1 tsp kosher salt
1 tsp garlic powder
½ tsp back pepper
Slice the garlic thinly. Remove the stems from the spinach, if you want.
Mix the flour with the dry spices on plate. Dredge each piece of chicken to coat well in the flour mixture.
Over med-high heat, melt the butter and add in the olive oil. Place each piece of chicken in the pan and cook 5-7 minutes on each side.
Remove the chicken. Add in the sliced garlic, cook for 1 minute. Add in the flour, cook for another minute. Add in the white wine and chicken stock. Whisk until smooth. Add in the whipping cream. Whisk.
Stir in the spinach. Return the chicken and simmer for a couple of minutes.
Remove the chicken again and add in the lemon zest and parmesan. Stir well. Serve.
Orzo Pasta
12oz orzo pasta
4 cups chicken stock
1 green onion
1 red bell pepper
3 garlic cloves
½ tsp black pepper
½ tsp salt
1 tsp garlic powder
juice from 1 lemon
Slice the green onion on both sides. Reserve the green stems. Dice the bell pepper. Mince the garlic.
Heat some olive oil over medium heat. Sauté the bell pepper and the white slices from the onion. Cook about 3 minutes. Add in the garlic and cook for another minute.
Remove the vegetables and add in the orzo. Stir for 1 minute. Add the chicken stock. Stir well. Bring to a simmer and stir frequently until the chicken stock is absorbed.
Add the sauteed vegetables back to the orzo and stir.
Remove from the heat. Add in the reserved green onion slices and the lemon juice. Stir and adjust the seasonings with salt and pepper, if needed.
Blueberry Sauce
1 cup blueberries
1 cup water
1 tbsp honey
1 tsp cinnamon
1 tsp lemon zest
Add all ingredients to a pot. Bring to a boil then reduce to a simmer. Cook for about 10 minutes until the blueberries begin to break down and the sauce turns a rich purple color.
Strain the blueberries from the sauce. Press on the blueberries to release as much of the juice as possible. Cover and set aside, or refrigerate for later use.
