Cucumber Shrimp Salad
Ingredients
1 lb cooked shrimp, chilled, tails removed
2 medium cucumbers, thinly sliced
1/2 cup mayonnaise
1/4 cup Greek Yogurt
1 tbsp fresh Lemon Juice
1 tsp fresh Dill, chopped
Salt and pepper to taste
Head of Butter Lettuce
Directions
1. In a large bowl, add the chilled cooked Shrimp and sliced Cucumbers.
2. In a separate container, combine the Mayonnaise, Greek Yogurt, Lemon Juice, Dill, salt and pepper. Stir until smooth.
3. Add Dressing to the Shrimp and Cucumbers. Toss gently to coat them evenly. Adjust seasoning to taste.
4. Chill the salad for at least 10 minutes before serving to allow the flavors to meld together.
5. Serve in Butter Lettuce Cups or on a bed of Lettuce.
