🧁 Tofu Mini Muffin Frittatas – Recipe
Ingredients:
• 1 block firm tofu
• 1 tbsp coconut oil (or any oil)
• 1 cup soy milk
• 3 tbsp nutritional yeast
• 1/2 tsp baking powder
• 1 tbsp cornflour
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1/2 cup chopped parsley
• 1 finely sliced zucchini
• 1/2 red capsicum, diced
• 1 pre-boiled potato, diced
• 1/4 finely sliced red onion
• 1/2 head broccoli, finely chopped
Method:
1️⃣ Blend tofu, soy milk, oil, nutritional yeast, baking powder, cornflour, salt and pepper until smooth.
2️⃣ Stir through the chopped veggies and parsley (or whatever veg you need to use up).
3️⃣ Spoon into a mini muffin tray and bake until puffed, golden and set.
