Today on Broke Gourmet, we’re making Sausage Stuffed Bell Peppers — and this time it’s not even for me! 😂
One of my coworkers’ houses is still being built and her kitchen isn’t ready yet… so I’m stepping in to rescue dinner and help keep her family fed.
These stuffed peppers are budget-friendly, family-approved, and packed with Italian sausage, rice, cheese, and tons of flavor. Way better than a frozen TV dinner — sorry “Alfredo’s”! 👀

🛒 Ingredient List — Sausage Stuffed Bell Peppers (Serves 6)
🌶️ Peppers
6 large bell peppers
2 yellow, 2 green, 2 orange (or mix you prefer)
🍖 Filling
1½ lbs Italian sausage (mild or hot)
1½ cups uncooked rice
(≈ 4 cups cooked)
1 medium onion, finely diced
2–3 cloves garlic, minced
1 can (28 oz) diced tomatoes
Drain about half the liquid
1½ teaspoons Italian seasoning
(or 1 tsp oregano + ½ tsp basil as alternative)
½ teaspoon salt (adjust to taste)
2 cups shredded mozzarella/cheddar mix
(plus extra to sprinkle on top)
Olive oil or butter for sautéing
Optional Flavor Boosters
Red pepper flakes (for heat)
¼ cup grated Parmesan
Chopped pepper tops sautéed into the filling
Fresh parsley for garnish
👨🍳 Step-by-Step Instructions
Sausage Stuffed Bell Peppers (Serves 6)
1️⃣ Preheat + Prep
Preheat oven to 375°F (190°C).
Cut the tops off the peppers, remove seeds and membranes.
Optional: Boil peppers 3–4 minutes for a softer texture. Drain upside-down.
2️⃣ Cook the Rice
Prepare 1½ cups uncooked rice according to package directions.
Fluff and set aside.
3️⃣ Sauté the Good Stuff
In a large skillet, add a little oil or butter.
Cook diced onion 2–3 minutes until softened.
Add garlic and cook 30 seconds more.
4️⃣ Cook the Sausage
Add Italian sausage to the skillet.
Break it up and cook until browned.
Drain excess grease if needed.
5️⃣ Build the Filling
Stir in:
Cooked rice
Diced tomatoes (drained halfway)
Browned sausage
Italian seasoning, salt, pepper
garlic powder, and onion powder
Mix well and taste — adjust seasoning before stuffing.
6️⃣ Get Cheesy
Turn off heat and fold in 1½ cups shredded mozzarella
(It melts and sticks everything together 🙌)
7️⃣ Stuff Those Peppers
Pack filling firmly into each of the 6 peppers.
Place them upright in a baking dish or on a tray.
Spoon a little extra tomato sauce on top if desired.
8️⃣ Bake
bake 30 minutes.
9️⃣ Melt + Brown
Add more cheese on top, and bake 10–15 more minutes
until cheese is golden and peppers are tender.
