Today I’m making a creamy white bean and sausage soup that’s:
One pot
Filling
Actually tastes like food
And doesn’t rely on the freezer aisle
The intro is a joke.
The food isn’t.
If you’re tired of frozen dinners pretending to be meals, this is what cooking at home actually looks like.

🍲 CREAMY WHITE BEAN & SAUSAGE SOUP
(Realistic, forgiving, no BS)
INGREDIENTS
1/2 lb ground sausage (Italian or breakfast sausage works best)
1 medium onion, diced
2 carrots, diced (optional but recommended)
2–3 cloves garlic, minced
2 cans white beans (Great Northern or cannellini), do not drain
4 cups chicken broth (or water + bouillon)
1 tsp salt (start light)
½ tsp black pepper
½–1 tsp Italian seasoning or dried thyme
Pinch of red pepper flakes (optional)
Olive oil (only if sausage is very lean)
INSTRUCTIONS
Brown the sausage
Medium heat, one pot.
Break it up and let it actually brown.
If it’s gray, you rushed it.
Add vegetables
Toss in onion and carrots.
Cook 4–5 minutes until soft.
Add garlic and cook 30 seconds.
Build the soup
Add both cans of beans with the liquid.
Add broth, salt, pepper, seasoning, and chili flakes.
Stir and bring to a simmer.
Make it creamy (without being dumb)
Scoop out about 2 cups of soup.
Blend until smooth.
Pour it back into the pot and stir.
Finish
Optional: add milk or half-and-half.
Simmer 10 minutes.
Taste and adjust salt.
TEXTURE NOTES (IMPORTANT)
Too thick → add broth
Too thin → blend more beans
This soup is forgiving, don’t baby it
