Jicama is a root vegetable that originates in Mexico. In this video we’ll explore its raw and cooked usages. To start, we have to peel the jicama. A vegetable peeler won't work bc the skin is paper thin. So use a knife to slice it off. Now it can be cut into strips to dipping or use a Mandoline. The texture is crispy and soft like an apple, so it will cut easily.

Now you can dip it, or sprinkle it with chili powder, lemon, lime, or sesame oil. Store it in the frig in an airtight container. It doesn't turn brown after cutting it so it will look fresh for a few days.

Regarding cooking with jicama, I've mostly seen it recommended to use in stir-fry so I'm cooking it in oil, with a little soy sauce, and finished off with sesame oil. When it's cooked, it gets crispier, a lot like water chestnut. That's good news for those of you who like water chestnut. All in all, it's best raw, but it can be cooked with.
