We had it for the big game, but these two delicious and simple recipes are great anytime. I used my bread maker to make my pizza dough, which was easy enough in itself, but buy a pizza crust at the grocery store and use rotisserie chicken to make this pizza a quick and easy meal.
The Chocolate Peanut Butter Sponge Cake is just as simple and just as satisfying. Give it a try when you need a simple treat.
PIZZA DOUGH IN A BREAD MACHINE
Combine: 1 1/3 cup warm (105- 115 degrees F) water, 2 1/2 tsp. active dry yeast and 1 Tablespoon sugar in a small bowl. Let set for 5 minutes until foamy. Place in the canister of your bread machine and add 2 Tablespoons olive oil.
Add: 3 1/2 - 3 3/4 cups all-purpose flour and 1 Tablespoon salt.
Place: Canister into the bread machine, close lid and choose the setting for Dough only.
BUFFALO CHICKEN PIZZA (makes 2)
Prepare: pizza dough, shape and place on an oiled pizza pan. Let rest.
Combine: 1 cup ranch dressing and 1/4 cup buffalo wing sauce. Chop or shred 1 1/2 - 2 cups cooked chicken. Stir half of the buffalo ranch dressing into the chicken,
Spread: a thin layer of remaining buffalo ranch sauce over the pizzas and top with mozzarella cheese. Place chicken on top and then another layer of mozzarella cheese. Drizzle remaining buffalo ranch dressing over top.
Bake: in a 450 degree F oven for around 18-20 minutes, checking often because oven temperatures vary.
CHOCOLATE PEANUT BUTTER SPONGE CAKE
Grease: a 10X15 jello roll pan
Combine: in a large mixing bowl 4 eggs, 2 cups white sugar, 1 tsp. vanilla extract. Mix together until creamy.
Add: 2 cups all purpose flour and 1 teaspoon baking powder and mix until combined.
Microwave: 1 cup milk and 2 Tablespoons butter until begins to bubbly. Stir into batter.
Pour: into prepared jelly roll pan.
Bake: in a preheated 350 degree F oven for 20 - 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Spread: 1 1/4 creamy peanut butter on top of cake while still warm, but not hot. Refrigerate cake until peanut butter is set, about 1 hour
Melt: 12 oz bag chocolate candy melts according to package directions. Spread evenly over top the peanut butter.
Slice: Allow chocolate to set up for about 10 - 15 minutes until it has started to harden but is still pliable. Slice into serving size pieces.
