Sweet Potato Cake (in case you don’t want pie!)

I’m not a pie eater, but I love cake. Thought I’d bake myself something for our Thanksgiving dessert table. It’s so good it’ll probably show up every year from now on!
SWEET POTATO CAKE:
1 cup unsalted butter, softened
2 cups sugar
4 large eggs
1 (21 oz.) can sweet potatoes, drained
1 teaspoon vanilla extract
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoons ground ginger
1/4 teaspoon salt
In a medium bowl stir together flour, baking powder, cinnamon, allspice, ginger and salt. Set aside.
Beat butter and sugar with a mixer until light and fluffy, scrapping sides of bowl periodically. Add eggs one at a time, beating well with each addition. Add in sweet potato and vanilla and beat again. Add in flour mixture and beat until combined. Scrap bowl as necessary.
Grease and flour 2 - (8) inch baking pans. Pour batter into baking pans, dividing evenly.
Bake at 350 degrees for 30 minutes or until inserted toothpick comes out clean. Cool in pans for 10 minutes. Remove from pans and let cool completely on wire racks.
CREAM CHEESE ICING:
2 - (8 oz.) packages cream cheese, softened
1 cup unsalted butter, softened
1 tablespoon vanilla extract
7 1/2 cups confectioners sugar
Toffee bits (optional)
In a large bowl, beat butter and cream cheese with a mixer until smooth and creamy. Beat in vanilla. Add in confectionery sugar a little at a time, beating well after each addition until smooth. Garnish with toffee bits if desired.
