Onion Sandwich Rolls - High Altitude ( 6,000 ft above sea level )
** THESE INSTRUCTIONS ARE FOR BAKING AT A HIGH ALTITUDE OF 6,000 FEET ABOVE SEA LEVEL - altitudes significantly lower or higher may need adjustment ** For example, this recipe will work great in Colorado, but won't work well at all in Illinois... please only use this if you are baking at an elevation between 4,500 - 7,500 feet above sea level. **

INGREDIENTS
ROLLS:
1/2 cup Warm Water AND 1-3/4 cups Water
2 tbls Sugar AND 1 t Sugar
5 tbls Active Dry Yeast (2 packs)
1/2 cup Oil (Veg, Corn, Olive, whatever oil you prefer)
2 t Salt
2 large Eggs
1 large Egg White
3 cups Flour AND 1 cup Flour AND 2-1/4 cups Flour
GRILLED ONIONS:
1/2 medium Yellow Onion, chopped
1 tbls Oil
EGG WASH:
1 large Egg
1 tbls Water

DIRECTIONS
ROLLS:
Combine: Warm Water, Yeast and Sugar (2 tbls)
Stir and set aside to bloom 5-10 minutes... will be bubbly/foamy
As the yeast blooms, combine in separate bowl: Water, Sugar (1 t), Oil, Salt, Eggs and Egg White
Stir until combined
Add Flour (3 cups)
Mix to combine
Add Yeast mixture and Flour (1 cup)
Mix to combine
Add Flour (2-1/4 cups)
Mix to combine
Sprinkle about 1/4 cup of Flour on counter/surface
Turn dough onto counter
Knead until all of the Flour is worked into the dough
It should be slighty sticky, but if too sticky add Flour 1 tbls at a time until right texture
Place dough into oiled bowl and turn to coat
Cover loosely with plastic wrap/towel
Set aside to rise approx. 1-1/2 hours or until double (warm days may take less time so keep an eye on it)
Punch dough back down, recover and set aside for another 30 minutes
Turn dough onto counter, punch a few times and then form into a flat rectangle (approx. 1/4" thick)
Cut 6 times width wise and 3 times length wise for a total of 18 pieces
Roll each piece into a ball by stretching/tucking sides down to the bottom
Place on parchment lined baking sheet
I prefer they bake into each other but if you'd rather they don't touch you'll want to set them 2"-3" apart
Cover with plastic wrap/towel and set aside for another 30 minutes or until doubled again
I make my Grilled Onions now followed by the Egg Wash so they're ready and slightly cooled by the end of that last rise
Brush tops of rolls with Egg Wash
Sprinkle Grilled Onions on top, pressing gently to kind of 'embed' them into the top of the dough
Bake at 375 degrees F for approx. 18 minutes
Different weather/times of year will have a different bake time so always make sure to keep an eye on your rolls.

GRILLED ONIONS:
Coat fry pan with Oil
Add chopped Onions and cook approx 8 minutes, stirring occasionally
You want to cook just until light golden brown

EGG WASH:
Beat together Egg and Water
