Easy Pound Cake
Today I'm going to show you how to make pound cake at home.
This is a pound cake made without butter and sugar, but still really moist and delicious.
It comes with less calories than traditional pound cake, which makes a great sweet snack or even breakfast.

POUND CAKE RECIPE
Ingredients:
1.5 cups ground oats or oat flour (150g)
1 cup quick cooking oats (90g)
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp ground turmeric
2 eggs
1/3 cup maple syrup, agave or honey (80ml)
1/4 cup unsweetened applesauce (65g)
2 tbsp extra virgin coconut oil
1 tbsp vanilla paste, or 2 tsp vanilla extract
1/2 cup Greek yogurt (120g)
NUTRITIONAL INFO (per slice):
137 calories, fat 4.5g, carb 19.6g, protein 4.3g
Preparation:
In a bowl, mix together the ground oats, quick cooking oats, baking powder, baking soda , salt and turmeric. Set aside.
In another bowl, using an electric mixer, beat the eggs with the sweetener of your choice, until smooth and airy.
Add the applesauce, coconut oil, vanilla and Greek yogurt, and whisk it all together until well combined.
Pour this egg mixture into the dry mix and gently fold in using a spatula (do not use electric mixer here).
Grease your loaf pan with some butter or coconut oil, pour in the batter and smooth the top.
Bake for 50 minutes at 350F (180C), or until the edges start to brown.
When baked let it cool in the pan for at least 15 minutes, then turn it onto a wire rack to cool completely.
Serve with some fresh fruit and whipped cream, or my quick homemade berry sauce.
QUICK HOMEMADE BERRY SAUCE
Ingredients:
1 cup frozen mixed berries (150g)
1 tbsp honey
1 tbsp chia seeds
2 tbsp water
Preparation:
Place all the ingredients into a small saucepan.
Bring it to boil, lower the heat and simmer for 5 minutes.
