I seared two New York strip steaks in the cast iron side by side : one is bison and the other beef. You can see the huge difference in color between the two steaks 🥩🦬🐂
Bison steak is leaner, a bit tougher and has a higher protein content. It has significantlu less fat. It is generally more nutrient dense, hence the deeper color. This is similar to beef that has been 100% grass fed.
Beef steak has a higher fat content, it is more tender and a bit less nutrient dense. It is generally more flavorful but bison is also very flavorful. Depends on preference.
