Oats Khichdi is a lighter take on classic khichdi, swapping rice for oats while keeping the same soft texture and gentle comfort. Made with moong dal, simple spices, and minimal fat, it’s nourishing, easy to digest, and still deeply satisfying.

Ingredients (Serves 2–3)
Base
• Rolled oats (not instant) ½ US cup | ½ UK cup | 45 g
• Split yellow moong dal ¼ US cup | ¼ UK cup | 50 g
• Water 3 US cups | 2½ UK cups | 720 ml
• Salt ¾ tsp | ~4 g
• Turmeric powder ¼ tsp | ~0.5 g
Tempering / Cooking
• Ghee or oil 2 tbsp | 30 ml | ~28 g
• Cumin seeds 1 tsp | ~3 g
• Fresh ginger, finely chopped 1 tbsp | ~10 g
• Green chilli, finely chopped (optional) ½–1 chilli
• Asafoetida (hing) ⅛ tsp | a pinch
Optional Veg (keep it gentle)
• Carrot, finely diced ½ cup | ~60 g
• Green beans or peas ½ cup | ~60 g
