Chopped Veggie Salad
I based my recipe on the veggies that I had on hand for this salad. You can do your own combination of approved vegetables in any amounts you would like. I am listing for you the weight in grams for each raw vegetable to equal 1 green serving.
The process is to chop one veggie at a time, weigh it, and divide that weight by the grams for 1 serving to see how many servings of that veggie you have. I would advise you to get each one to a whole number. That means removing some from the container until you have that amount.
For example – I chopped up zucchini. For 1 green of zucchini, I would need 56.5 grams. I chopped my zucchini and weighed it. I had 362 grams. That is more than 6 greens (339 grams) and less than 7 (395.5 grams), so I removed zucchini until I got it to 339 grams. I did that for each veggie. Save the leftovers of each in a baggie and feed them to your hubby ;)
Here are my ingredients and amounts:
339 grams Zucchini (56.5 grams for 1 green) – (6 greens)
350 grams Cauliflower (50 grams for 1 green) – (7 greens)
455 grams Summer squash, crookneck (65 grams for 1 green) – (7 greens)
176 grams Broccoli slaw mix (44 grams for 1 green) – (4 greens)
416.5 grams Cucumber without peel (59.5 grams for 1 green) – (7 greens)
149 grams Green pepper (74.5 grams for 1 green) – (2 greens)
447 grams Red/Orange/Yellow pepper (74.5 grams for 1 green) – 6 greens
174 grams Radishes (58 grams for 1 green) – (3 greens)
Vinaigrette Dressing
4 T red wine vinegar
2 t. Dijon mustard
3 T olive oil
2 T lemon juice
2 t. garlic, minced
1 t. black pepper
½ t. salt
2 t. dry tarragon (or herb of choice)
2 T. water
Mix all but the oil in a jar. Once everything is combined, whisk in the oil. This jar makes 12 condiments (13 T – 1 T per condiment – you can also use 2 T of this dressing as a healthy fat)
My total mixture weighed in at 2530 grams. I divided that by the 42 greens that I used. So each green serving will weigh 60.25 grams. Each green serving will have ¼ of a condiment as well.
