5 lbs or 2.2 kgs Pork diced into 1/4 inch peices
Group A
200 gms of red Kashmiri Chilly Powder
150 gms of Garlic
150 gms of ginger
75 gms Cumin Powder
25 gms Corriander Powder
100 gms of Garam Masala Powder, (Home made preferably with equal quantities of Cinamon, Clove and Cardamomn )
50 gms of Pepper
25 gms turmeric Powder
250 ml feni
500 ml vinegar
2 tspns of Liquid Smoke
Blend Group A together, mix with pork, Store in GLASS jars only or stuff into casing
if stuffing into casing hang out to dry for 2 days in the sun
then store in an airtight vessel in the fridge
