Buffalo Mac N Cheese
~Ingredients~
Kosher Salt For The Pot Of Water
12oz Elbow Macaroni
2 Tbsp Salted Butter
1 Small Yellow Onion Diced
3 Garlic Cloves Minced
Pinch Kosher Salt
1/2 Tsp Black Pepper
1 Tbsp All Purpose Flour
2 1/2 Cups Milk
1/2 Cup Heavy Cream
1 1/2 Cups Grated Sharp Cheddar Cheese
1 1/2 Cups Grated Pepperjack Cheese
1/4 Cup Buffalo Sauce
2 Tbsp Buttermilk Ranch Dressing
1/2 Cup Crumbled Blue Cheese
Celery Leaves If Youd Like
1.5 lbs Boneless Skinless Chicken Thighs
Buffalo Sauce For Marinade
2 Cups Corn Starch
~Instructions~
Dice Up 1.5lbs Of Bonless Skinless Chicken Thighs Into Small Bite Size Pieces Around 1" Then Lightly Season With Salt & Pepper Or A Spicy Seasoning Toss The Meat Around To Ensure Coated Then Add To A Large Bowl & Add 1/3 Cup Of Hot Sauce Toss To Fully Coat Cover & Let Marinate For 1 Hour.
In Another Bowl Add 2 Cups Of Cornstarch & Set Aside.
Bring A Large Pot Of Salted Water To A Boil Once At A Boil Add 12oz Elbow Macaroni Pasta & Cook Till Al Dente Then Drain & Set Aside.
Set Oil To 350°F.
Once The Chicken Is Marinated Pull From The Fridge One At A Time Drip Off Excess Hot Sauce Add To Your Corn Starch Shake Off Excess Corn Starch & Set On A Plate & Repeat With All Your Chicken Then Set Aside.
In A Saucepan Add 2 Tbsp Salted Butter Over Medium Heat Once Butters Melted Add 1 Small Yellow Onion Diced, 3 Garlic Cloves Minced Season With 1/2 Tsp Black Pepper, Big Pinch Of Kosher Salt Then Cook Until Onion & Garlic Are Softened Around 4 Minutes.
After 4 Minutes Sprinkle 1 Tbsp All Purpose Flour Over Your Onions/Garlic Stir To Make A Roux Let Cook For 2-3 Minutes Before Slowly Pouring In 2 1/2 Cups Milk Then Slowly Stirring In 1/2 Cup Heavy Cream Bring To A Gentle Boil Allowing The Mixture To Thicken Slightly 2 To 3 Minutes.
Once Thickened Reduce The Heat To Low & Stir In 1 1/2 Cups Grated Sharp Cheddar Cheese, 1 1/2 Cups Grated Pepperjack Cheese A Handful At A Time Allowing Each Addition To Melt Before Adding The Next.
After All Cheese Is Melted Add In 1/4 Cup Buffalo Sauce, 2 Tbsp Buttermilk Ranch Dressing & Cook 1 To 2 Minutes. Taste & Adjust Seasoning As Needed Then Add Cooked Pasta To The Sauce & Toss Well To Combine.
Add Your Corn Starch Coated Chicken Into The 350°F Oil & Cook Till Golden Crispy & Atleast 165°F Around 3-4 Minutes.
Once Chicken Is Done Pull From The Hot Oil Add To Paper Towel To Dry & Repeat With The Rest Of Your Chicken.
Serve With Your Chicken On Top With Blue Cheese Crumbles Celery Leaves & Drizzle Of Hot Sauce If You Like.
