I used to have white polao (or pilau) rice, one piece of roast chicken and a hard boiled egg in a paper box growing up in Dhaka, Bangladesh. My mom would get these from hotel/restaurants every time we returned from a trip or when there were renovations being done at the house, deeming the kitchen useless. I also remember having this pulao in funerals (cue the trombone) and honestly, it is one of the most delicious things I miss from Bangladesh, while living in California, US. It's definitely on top of my comfort food list and reminds me of home.
This recipe is a result of many trial and errors so I hope you enjoy it! It IS time-consuming but easy to follow. For all you foodies, out there, this yummy recipe is a must-try.
It has a lot of spices but it isn't hot.
Ingredients below for 8-10 people (please comment if you have any questions on substitutions!):
Chicken
Oil: 0.5 cup
Ghee (clarified butter): 2 tbsp
Medium chicken: 10-12 pieces (preferably thighs and drumsticks/leg quarters)
Chopped white onion: 1.5 cups
Bay leaves: 2
Cinnamon Sticks: 3
Cardamom: 5
Cloves: 6
White pepper: 8
Ginger garlic paste: 1/3rd cup
Coriander powder: 2 tsp
Cumin powder: 2 tsp
Green chili pepper (optional): 5
Black cumin: 2 tsp
Nutmeg: 1/2 tsp
Mace: Less than 1 piece
Rosewater: 6 drops
Yogurt: 1 cup
Sugar to taste
Salt to taste
6 hardboiled eggs (optional: cut in halves)
For Rice Polao/Pilau:
Oil: 1/4 cup
Ghee (clarified butter): 2 tbsp
Chopped white onion: 1/4 cup
3.5 cup kalijeera rice (can replace with any other long-grain rice or Basmati)
Boiling water: 5.25 cups (ratio of rice:water=1:1.5)
Bay leaves: 2
Cinnamon Sticks: 3
Cardamom: 5
Cloves: 4
Ginger garlic paste: 1/3rd cup
Green chili pepper(optional): 5
Kewra jol (rosewater): 8 drops
Pinch of Saffron soaked in water
Salt to taste
