Ingredients:
■ 2.5 KG Mutton (Lamb)
■ 2 Big SP Clarified Butter (Desi Ghee)
■ Half Cup Oil
■ 3 inch Cinnamon
■ 2 PS Bay Leaf
■ 750 GM Onion
■ Salt to taste
■ 2 tbsp Shah Jeera (Caraway Seeds)
■ 2 tbsp Ginger Garlic, chopped
■ 5 Glass Hot Water
□ Afgani Garam Masala: ♤
● 1 tbsp Salt
● 3 tbsp Cumin Seeds
● 3 inch Cinnamon
● 7-8 PS Black Cardamom
● Half tbsp Cloves
● 2 PS Carrot, sliced
● 25 PS Almond (Badam)
● 15 PS Pistachio (Pista)
● 50 GM Kala Kishmish (Black Raisins)
● 2 KG Biryani Rice
Instructions:
1▪︎ Cook Mutton: Heat ghee and oil, add cinnamon, bay leaf, and onions. Cook until golden brown. Add mutton, salt, shah jeera, and ginger-garlic. Cook for 5 minutes, add hot water, cover, and cook for 45 minutes.
2▪︎ Make Afgani Garam Masala: Dry roast salt, cumin seeds, cinnamon, black cardamom, and cloves. Grind into a powder.
3▪︎ Prepare Rice: Layer soaked rice, Afgani masala powder, carrot, kala kishmish, and nuts in a big pot. Add boiled water and cook for 40 minutes (5 minutes high flame, 35 minutes low flame).
