One of my favourite curry's! This delicious potato and aubergine curry is perfect to eat with roti/chapati and rice. I have listed all the ingredients below and this video will show you exactly how to make this beautiful dish.
It really is simple to make so why not give it a go!
Ingredients for stuffing:
1/2 cup chickpea flour/chana flour/besan/gram flour
1/2 ground peanuts
1 1/2tsp garam masala
1/2 cup finely chopped coriander
1tbsp lemon juice
1tsp sugar
1.5tsp salt
1tsp ginger paste
1tsp turmeric / Haldi
1/2 cup sunflower oil
1 1/2tsp minced chili
2tbsp coriander and cumin powder
Ingredients for curry / sabzi
10 small par boiled baby potato
10 baby aubergines
5 tomatoes and 2 chilies blended
1/2 cup sunflower oil
1tsp mustard seeds/rai
1 dry red chili
1 tsp cumin seeds/jeera
1/2tsp Tumeric
1 1/2tsp salt
1 1/2tsp coriander and cumin powder
