Usually everyone make Baigan bharta, Baigan Aalu and Baigan ka Raita. But this dish Arghwani Baigan is my Aunty’s recipe which I make whenever I miss this yummy Baigan in chutney style…. Goes well with Naan, Chapatti, Tandoori roti and Parathas.
Serve it hot in breakfast, lunch or dinner with lacha pyaz and Enjoy !!!
Ingredients:

2 medium eggplants
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger, minced
1 medium tomato, finely chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon chili powder (optional)
salt to taste
1/2 cup water
2 tablespoons chopped fresh cilantro (optional)
Instructions:

Cut the eggplants into 1-inch cubes.
Heat the oil in a large saucepan over medium heat. Add the cumin seeds and cook for 30 seconds until fragrant.
Add the onion, garlic, and ginger and cook for 3-4 minutes until the onion is soft.
Add the tomato, coriander, cumin, turmeric, chili powder (if using), and salt. Cook for 2-3 minutes until the tomato is soft.
Add the eggplant and water to the saucepan. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes until the eggplant is tender.
Stir in the cilantro, if using, and serve hot.
