🍔 Vegan Burger with Chickpeas & Nuts

🟣Ingredients:
For the burger:
50 g macadamia nuts
60 g cashews
50 g peanuts
400 g cooked chickpeas
2 carrots
½ zucchini
2 garlic cloves
1 tbsp tomato paste
1 tbsp oregano
1 tbsp thyme
1 tbsp tamari
2 tbsp nutritional yeast
½ tbsp ground cumin
Salt
Olive oil
To serve:
Gluten-free burger buns
4 lettuce leaves
4 tomato slices
½ red onion
½ avocado
Yogurt sauce
🔵Preparation:
1. In a food processor, blend the macadamia nuts, cashews, and peanuts. Add the chopped carrot and pulse into a rough paste.
2. Add the cooked chickpeas and blend again until combined. Transfer the mixture to a large bowl.
3. Grate the zucchini and squeeze out excess water using a clean cloth. Add to the bowl.
4. Grate the garlic and mix in along with the tomato paste, oregano, thyme, tamari, nutritional yeast, cumin, and a pinch of salt. Stir until well combined.
5. With slightly wet hands, shape the mixture into burger patties.
6. Cook the patties in a non-stick pan or griddle with a drizzle of olive oil until golden on both sides.
7. Toast the gluten-free burger buns. To assemble: spread yogurt sauce on the base, then layer with lettuce, tomato, the burger patty, avocado slices, and red onion rings. Top with more sauce and the bun.
