🍫 Peanut & Almond Butter Cups
A wholesome twist on the classic peanut butter cups — made with toasted peanuts and almonds blended with dates for a naturally sweet, creamy filling. Coated in rich dark chocolate and topped with a touch of coarse sea salt, every bite delivers the perfect balance of sweet, salty, and nutty flavours. 🌰🍫✨

🟣 Ingredients:
For the nut butter filling:
150 g peanuts
100 g almonds
5 dates
For the peanut butter cups:
½ tbsp coconut flour
A pinch of salt
1 bar (approx. 100 g) 85% dark chocolate
Coarse sea salt (for garnish)
🔵 Preparation:
1. Spread the peanuts and almonds on a baking tray and roast at 180°C for 20 minutes, stirring every 5 minutes for even toasting.
2. Meanwhile, cover the dates with hot water and soak for 20 minutes until soft.
3. Let the nuts cool, then transfer them to a food processor along with the drained dates. Blend until you get a thick, smooth paste.
4. Mix this nut paste with coconut flour and a pinch of salt to form the filling.
5. Melt the dark chocolate using a bain-marie (double boiler).
6. Pour a small amount of melted chocolate into silicone moulds, coating the base and sides evenly with a spoon or spatula. Chill until solid.
7. Once the chocolate layer is set, spoon in the nut filling. Cover with another layer of melted chocolate and smooth the top.
8. Sprinkle with coarse sea salt and refrigerate again until fully set.
9. Once firm, remove the cups from the mould and enjoy!
🔷 Tip:
Let the first layer of chocolate set completely before adding the filling, and chill the cups again before pouring the top layer. This ensures well-defined layers and a firm, glossy finish.
Peanuts are naturally rich in B vitamins, magnesium, and pantothenic acid — nutrients that help reduce fatigue — while dates bring a natural sweetness, eliminating the need for added sugar.
