INGREDIENTS FOR 2 PEOPLE

for the tortilla "Spanish omelette":

4 large eggs
2 parsnips
1/4 of green garlic
1/2 leek
A hand full of parsley
Olive oil
Salt & black pepper
Water

for the parsnip chips:

1/2 parsnip
grapeseed oil

for the parsnip puree:

1 parsnip and the remains
from the chips and tortilla mix.
5 tbsps olive oil
3 tbsps cooking liquid
Salt
