How about a Japanese bean in to a burger! This littles red beans give a incredible flavour and texture. We have come out with a fusion of flavours that makes this adzuki bean burger a must to try!

INGREDIENTS for 7 patties

to cook the beans:

500g. adzuki beans
1 tsp. of salt
1 bay leaf
water

for the shiitake duxelles:

250g. shiitake mushrooms
3 medium size shallots
1 clove of garlic
5 sun dried tomatoes
1 tsp. of dried oregano
1 tsp. of thyme leafs
2 tbsps. olive oil

for the patties:

500g. cooked adzuki beans
3 slices of mixed seed bread
1 tsp. of salt
Plenty of ground black pepper
1 tsp. of mushroom powder
2 tbsps. of soy sauce
Shiitake duxelles
2 tsps. of dijon mustard
2 tbsps. nutritional yeast
Olive oil as needed to cook the patties!

toppings:

Goat chees, as much as you prefer!
Beetroot, 3 slices per patty
2 tbsps. of hummus per patty
2 tbsps. of fresh parsley per patty

INGREDIENTS

for the hummus:
water to cook the chickpeas
500g. chickpeas
1 lemon juice
2 tbsps. salt
1 clove of garlic
65g. sesame paste (tahini)
1 tbsp. ground cumin
4 to 6 tbsps. of icy water
2 tbsp. olive oil


toppings:

a few whole cooked chickpeas to add extra texture!
1 tsp. of paprika
2 tbsps. of olive oil
1 tbsp. chopped parsley
