How to Make a Chocolate Cream Pie… in the MICROWAVE!

OK, seriously, I didn’t think this was possible. My husband used to have a cafe in Tennessee, and he made these pies for holidays. He made chocolate, vanilla, and coconut versions in the microwave! I was like, “Naw, that’s just not possible!” He couldn’t remember the recipe exactly but he wrote down what he could and we set out to recreate it. Honestly, I thought it would be a colossal fail, but much to my surprise, and after a little recipe tweaking, it was AMAZING! I mean, REALLY GOOD, AMAZING! And fast! 15 minutes from start to finish. Now, I wouldn’t make a cream pie any other way. Oh! Try adding coconut for a Chocolate Coconut Crème Pie…it’s a game changer!
Alain’s Microwave Chocolate Cream Pie
Mix together:
1 C sugar
3 Tablespoons corn starch
1/4 teaspoon salt
Gradually stir in:
2 1/2 C whole milk
Vigorously mix in until no yellow streaks remain:
5 large egg yolks
Cook in the microwave (full power) for 2 minutes. Then whisk it really good. It will be pretty liquidy at this stage.
Return to the microwave and cook 2 more minutes, whisk it really good, smoothing out any lumps. It should be a little bit thicker.
Return to the microwave for 2 more minutes (this makes 6 minutes total). Whisk it really good, smoothing any lumps. It should be getting much thicker by now and almost pudding like.
If it’s not quite thick enough, return it to the microwave for 45 more seconds. Whisk it and smooth out any lumps. It should be nice and thick by now, if not continue microwaving in 30 second intervals, whisking after each.
Once you have a nice, thick pudding like texture, stir in:
3 Tablespoons Butter
4 oz. Unsweetened Baking Chocolate
1 teaspoon vanilla
Stir until everything is melted and creamy. Pour into a prepared pie shell. You can use a pre-baked and cooled pastry pie shell or a graham cracker (or chocolate graham cracker) shell.
Cover with Saran Wrap while it’s still hot, then refrigerate for 4 hours before serving.
Microwaves cook differently so it might take an only 6 minutes in yours, or a little longer. With just a little experimenting, you’ll master this recipe quickly!
