It is the perfect recipe for Summers with Mangoes

Method-
Grease the baking tray and line it with parchment paper. Set aside.
Now, take a mixing bowl and add in oil, powdered sugar and condensed milk into it. Whisk them together to form a homogeneous mixture.
Further, add the vinegar and vanilla essence and mix well.
Add in milk in parts and whisk the mixture once again. Set aside.
In another bowl, mix together maida, baking powder and baking soda.
Seive this mixture and add into the prepared batter in two parts while mixing along to form a smooth, flowing and lump free batter. DO NOT OVER MIX.
Pour the batter into the baking tray and even it out very well. Tap the tray on the cooking platform 4-5 times so that all uneven bubbles are removed.
Bake this at 190°C for 10 mins in a preheated oven.
Remove, place a parchment paper and another baking tray on top while it's still hot.
Turn it upside down and remove the parchment paper from top. Trim the sides and place back the parchment paper.
Flip it again and remove the other parchment paper.
Spread the mango jam evenly and start rolling it tightly as shown in the video.
Cover with the parchment paper, wrap like a toffee and refrigerate for 30 mins.
After 30 mins, remove and slice the Swiss roll carefully using a serrated action.
Serve and enjoy!!
This can be stored upto 2-3 days in an airtight container.

Whisk the sugar, oil and condensed milk well.
Add in all the dry ingredients after seiving. It incorporates some air into the batter and also removes any lumps formed.
The batter must be smooth and flowy.
Do not over mix, just combine all ingredients well.
Spread the batter evenly and make sure to tap the tray before placing into the oven. This is very important to remove any uneven bubbles formed.
Always ensure to preheat your oven for uniform cooking.
Remove the edges as they become dry.
Ensure that your jam is spreadable
The entire process of spreading the jam and making the Swiss roll must be done while the the cake it warm. be quick and prepared.
Roll it up tightly and refrigerate for 30 mins.
Using a serrated action for cutting is very important for a perfect Swiss roll.
