Definitely smoking lamb ribs again! These were soooo good!!!
I lit up half a small chimney with Weber briquettes and added to charcoal chamber along with a couple chunks of post-oak. While the Weber Smokey Mountain was coming up to temp, I cleaned and seasoned the lamb ribs. Did quite a bit of trimming as there was a lot of fat on the lamb rib tips. Once the WSM was up to 225, I added the ribs to the cooker. I closed down all 3 bottom vents to about 1/4" and this locked in the temp at 250 for the entire cook. Smoked 3 1/2 hrs until probe tender. No spritz, no wrap.
